l have the basics: omelettes in a ziploc bag, classic s'mores, hot dogs and hamburgers. I'd really like to change up my typical camping menu.

Sliced potatoes, onions & butter in foil over the heat - when potatoes are soft, toss in some shredded cheese and reseal til the cheese melts.

take a 1/4 ounce of mushrooms with you, and let the party begin, wait till night time to eat them.

Canned ham is great for sandwiches, or your favourite canned meat, like maybe salmon or tuna.

Bring pancake mix with you, and you can get the kids to pick fresh berries, like blueberries, raspberries, strawberries, or whatever else that is edible, grows in your area, and is in season. Otherwise, you can bring some with you. Chocolate chips are good too.

Trail mixes and dried fruit is another option.

Good old fashioned standby that most people forget about is the Manwich Sloppy Joe!

Another version of the aforementioned potatoes B/4 u leave home, cut up 4 or 5 lg Yukon gold potatoes microwave for about 4 or 5 mins so they r already somewhat cooked & wo not take all day.

place cut up potatoes in aluminum foil ''bag'' add as much or as little of the following to ur own taste
butter
garlic powder
italian seasoning
grated cheese.
cook over grill until potatoes look slightly browned
Yum!

Also easy get package of chicken legs (drumsticks) & dump them in a ziplock bag with italian dressing or bbq sauce & stick them in a cooler. When u r ready to cook them, they r already marinated & cook rather quickly --no utensils needed!

Coffee Can Cookery
2 Strips bacon
1 Med. potato, sliced
1 Med. onion, sliced
1 Med. tomato, sliced
2 Stalks celery
1/3 lb Ground beef
1 Carrot
Salt & pepper to taste
Coffee can & lid
Cut carrot in half lengthwise. Cut celery & carrot into 2'' lengths. Cut bacon in half. Mold 2 meat patties. Place 2 pieces of bacon on bottom of can. Place layers of all ingredients. Repeat. Place closed coffee can on top of glowing coals for 25 min. Open lid & check after 10 minutes, if browning too rapidly, pour 2 Tb. of water in can.

Roast Corn
2 Ears or corn
Salt & pepper
Butter
String
Peel ears leaving husks on at bottom & remove corn silk. Replace husks covering ears & tie around top. Dip corn in salt water. Place corn on screen over hot coals & turn often until all side r done. When cooked remove husks & add salt & pepper & margarine.

Onion Swiss Steak
3 lb Round steak, 3/4'' thick
1 1/2 ts Salt
1/4 ts Pepper
2 pk Onion soup mix
2 cn (10 oz) tomatoes
Cut steak into serving pieces, season with salt & pepper & place into dutch oven. Sprinkle onion soup mix over top & pour tomatoes over all. Cover & cook over slow fire for 2 to 3 hours or until meet is done & tender.

Foiled Burgers
1 lb Ground beef
4 Squares heavy duty foil (16x16 inches)
4 Carrots; chopped
1 can New potatoes; sliced (16oz)
2 sm Green peppers; chopped
Dehydrated onion flakes
Worcestershire sauce
Salt & pepper to taste
Separate the meat into 4 portions. Place each portion in the center of a aluminum foil square. Top with equal portions of chopped carrots, potatoes & bell peppers. Season with dehydrated onion flakes, Worcestershire sauce, salt and/or pepper to suit ur taste. Seal the foil, check for leaks.
Place on the coals for 10 to 15 minutes per side.

Sizzlin' Beef Kabobs
3 tb Veg. oil
2 tb Soy sauce
1 tb Red wine vinegar
1 ts California StyleBlend Garlic Powder .
3/4 ts Hot Shot! Glack & Red Pepper Blend
1 lb Sirloin steak, cut into 1'' cubes
Assorted vegetables
Combine first 5 ingredients in large self closing plastic bag or shallow glass dish. Add steak; toss to coat. Refrigerte 3 or more hours. Spear with veggies on metal skewers. Grill 12-15
minutes, turning frequently.

Chicken In Foil
1 sm Green bell pepper; chopped
1/2 sm Red bell pepper; chopped
10 Mushrooms; chopped
4 Chicken breast; halved
1 can Pineapple slices; 8oz
1 ts Butter or margarine
Garlic powder, salt and/or pepper to taste
4 16-inch squares aluminum foil
Divide the peppers & mushrooms into four equal parts. Coat a small area in the center of the foil with butter or margarine. Place a portion of peppers & mushrooms on the greased area of foil. Top with a chicken breast & a pineapple slice. Season with garlic powder, salt & pepper.
Fold foil securely & check for leaks. Place on coals for 10 to 15 minutes per side.
Makes about 4 servings.

Box Oven
1 Brick or flat rock
1 Corrugated cardboard box
3 Coat hangers
1 pk Aluminum foil, heavy-duty
1 Metal pie pan,
old 4 Charcoal briquets, lit
Cover the inside & outside of the box completely with 3 or 4 layers of aluminum foil, including the flaps. Lay box on level ground so that the opening opens oven-style (front-door style is OK, too).
Straighten the coat hangers, then run them through the sides of the box about 2/3 of the way up from the bottom to form a rack.
Set brick in bottom. Place live coals into pie pan/pie plate. Put pan on brick (do not forget, the PIE PAN IS HOT! Use an oven mitt or hot pad).
Place food to be cooked onto coat-hanger rack & close oven door. Watch carefully, checking often. Each live coal makes about 80F.

This oven really works. It is great. Have fun!

l can not believe no one mentioned mountain pies?! You know, those metal clamps that u put some butter on, then some bread, then apple pie or cherry pie filling, & stick in the fire (can do grilled cheese too).

l like tin foil meals.

Start a fire & let it smolder. You want it to turn to hot coals.

Put some ground beef on the dull side of a large square of tin foil. You can also use beef tips & chicken if u want, but l like it with ground beef.

Add vegetables to ur liking. Carrots & potatoes r a must. Peppers & onions r good too. l like to smoosh them into the meat a little, rather than just laying them on top.

Add condiments to taste. l usually put ketchup & bbq sauce, then salt & pepper. Use more of the liquid condiments than u normally would, as they will evaporate as they cook. Steak sauce & worcester sauce can be used too if u like it. I've never tried mustard. You can use any store brand grill spices too.

Now, take two opposite sides of the tin foil, & them over the food, like you're wrapping a present. Then take the other two sides & roll them up tightly to the edges of the food. Now is a good time to use a sharpie to put initials on yours if multiple people r cooking.

Toss it in the hot coals. Flip it periodically. l think it takes about 20 minutes or so to cook, maybe less. l am bad with time.

Take it out & carefully open it up. Careful of the steam.

Add any more seasonings if needed. l eat it out of the tin foil, but u can put it on a plate too obviously. My mouth is watering just thinking about it.

This is a really easy thing to make, & fairly cheap too if u have a large group of people to cook for. Especially fun for kids on camping trips because they can make it themselves.
